2/3: Making the sandwiches

Ingredients for Pain surprise :

  • Pâte à pain :
  • 750 g de farines boulangères pour pain
  • 485 g d'eau
  • 30 g de levure de boulanger fraîche
  • 15 g de sel fin
  • 200 g de fromage de brebis
  • 2 tranches de jambon blanc
  • 2 ou 4 tranches de jambon de Bayonne
  • 200 g de beurre ramolli
  • 200 g de beurre de roquefort
  • 1 ruban en tissus

Important points for Pain surprise :

  • Butter 6 or 8 slices (leaving two un-buttered).
  • Slice the cheese thinly.
  • Place the Bayonne ham, ham, and sheep's cheese on buttered bread slices. Butter the last slices with roquefort butter.
  • Place each slice on top of each other to make a sandwich.
  • Cut the sandwich tower into quarters lengthwise.
  • Rebuild the loaf arranging each layer with the 4 varieties.
