Ingredients for Almond Paste Parchment :

  • white almond paste
  • cornstarch

Technical stages for Almond Paste Parchment :

  • Form a well mixed and homogeneous ball with the almond paste.
  • Flour the working bench with cornstarch.
  • Roll out the almond paste lengthwise.
  • Get rid of any excess cornstarch with a brush.
  • Remove from the bench woth a metallic spatula. Cut a strip.
  • Crush the end with a rolling pin to make it thinner.
  • Do the same on the opposite end.
  • Roll both ends.
  • With a culinary torch, brown the sides to give an ancient look to it.
  • Beware not to burn it too much.
  • Let dry for a couple of days on the table. With a royal icing filled icing bag, you can add a text related to the event you prepared it for (ie "Happy Birthday").
