Fresh Pasta

Ingredients for Fresh Pasta :

  • White lump:
  • 1 kg flour
  • 10 egg yolks
  • salt
  • Green lump:
  • same as for a white one, adding chlorophyl or pureed spinach
  • Red lump:
  • same as white lump, adding tomato paste

Technical stages for Fresh Pasta :

  • Put all the ingredients in the food processor. Knead quickly with the hook on, but not too thoroughly. Put the dough on the counter and press it with your hands. until firm and homogeneous.
  • Let it rest under a piece of cloth for a few hours.
