Puff Pastry Paste
  • For : 6-8 servings
  • Time : 30 minutes
  • Difficulty :  medium

For this recipe, you need :

  • 1/4 litre water
  • 200 g flour
  • 100 g butter
  • 1 pinch salt
  • 4 eggs

Technical Stages :

  • Put the water, butter and salt to a boil.
  • When boiling point is reached, remove from the stove and add the flour at once. Mix strongly with a wooden spatula until obtaining a homogeneous and chunkless dough.
  • Put back on the stove and dry the dough, stirring constantly until it doesn't stick to the sides of the pot anymore.
  • Take away from the heat and keep stirring to cool it a bit. The dough at this stage is called "panade".
  • Combine the eggs one after the other using a wooden spatula.
  • When all the eggs are combined, the paste is ready for use.
  • Use quickly!!!
