Technical stages for Puff Pastry Paste :
- Put the water, butter and salt to a boil.
- When boiling point is reached, remove from the stove and add the flour at once. Mix strongly with a wooden spatula until obtaining a homogeneous and chunkless dough.
- Put back on the stove and dry the dough, stirring constantly until it doesn't stick to the sides of the pot anymore.
- Take away from the heat and keep stirring to cool it a bit. The dough at this stage is called "".
- Combine the eggs one after the other using a wooden spatula.
- When all the eggs are combined, the paste is ready for use.
