Puff Pastry Paste

Ingredients for Puff Pastry Paste :

  • 1/4 litre water
  • 200 g flour
  • 100 g butter
  • 1 pinch salt
  • 4 eggs

Important points for Puff Pastry Paste :

  • Bring the water with the butter and salt to a boil.
  • Away from heat, add the flour.
  • Mix and dry the dough on the stove.
  • Combine the eggs one by one in the slightly cooled panade, using a wooden spatula.
  • Quickly use this dough. It cannot be prepared a day in advance.
