Technical stages for Giant stuffed pasta :
- Boil the pasta until "al dente". Drain, rinse in cold water, drain again (without breaking them).
- Mix the oil, onion, pancetta and garlic in a pan. Cook over medium heat until soft.
- Remove the stems from the spinach leaves and clean them. Chop finely the leaves. Put the spinach and tomatoes in the pan and cook until soft.
- Take away from the heat. Combine with the ricotta, basil and nutmeg.
- Fill up the pasta with this mix and put on a baking sheet.
- Sprinkle with parmesan and cook in medium oven (180°C or 356°F) for 10 minutes. Serve with the at the bottom of the plate.
