Giant stuffed pasta
  • For : 4 servings

For this recipe, you need :

  • 16 giant shell-shaped noodles
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 125 g chopped pancetta
  • 2 crushed garlic cloves
  • 12 large spinach leaves
  • 2 peeled, seeded and crushed ripe tomatoes
  • 250 g ricotta cheese
  • 2 tablespoon chopped basil
  • 1 pinch nutmeg
  • 1/2 cup grated parmesan cheese
  • tomato sauce

Technical Stages :

  • Boil the pasta until "al dente". Drain, rinse in cold water, drain again (without breaking them).
  • Mix the oil, onion, pancetta and garlic in a pan. Cook over medium heat until soft.
  • Remove the stems from the spinach leaves and clean them. Chop finely the leaves. Put the spinach and tomatoes in the pan and cook until soft.
  • Take away from the heat. Combine with the ricotta, basil and nutmeg.
  • Fill up the pasta with this mix and put on a baking sheet.
  • Sprinkle with parmesan and cook in medium oven (180°C or 356°F) for 10 minutes. Serve with the tomato sauce at the bottom of the plate.
