Technical stages for Sweet Dough :
- Mix the butter and icing sugar with a wooden spoon until homogeneous.
- Add the egg and keep mixing. This is what is called a "crémé".
- Add the flour, salt and vanilla extract. Mix and knead into a ball.
- Press the dough with your hands to homogeneize it. Let it sit in the fridge for 30 minutes at least.
- NOTE:
- Do not overknead the dough or it will become too fragile.
