Ingredients for Patxaran :

  • 1 litre aniseed flavoured spirit
  • A hundred wild bilberries that can be picked between August and October: this makes a volume of 1/3 litre
  • 2 Vanilla beans
  • 3 coffee beans

Technical stages for Patxaran :

  • Method 1:
  • Macerate all the ingredients for about 4 months.
  • Sieve using a chinois with a fine gauze and pour in bottles.
  • Method 2:
  • You can directly place the bilberries in bottles with a split vanilla bean, coffee beans and then add the aniseed flavoured spirit.
  • Leave to macerate for at least 4 months before serving.
  • In this case, no shaking is required and bilberries are not to be eaten (It is said in the Basque country that these marinated berries can drive you crazy!)

  • Whatever you do, make sure that the mixture does not turn red (but rather dark like the color of strong infused tea). If it still happens, add anise liquor to the mixture.
