Ingredients for Snails and Potatoes :

  • noirmoutier or grelots potatoes
  • canned snails
  • butter
  • garlic and parsley
  • salt
  • pepper

Technical stages for Snails and Potatoes :

  • Peel and boil the potatoes. Meanwhile, chop the parsley and garlic to make a persillade.
  • Scoop out the flesh of each potato.
  • Warm up the rinsed snails in butter.
  • Add the persillade and season.
  • Deposit a snail in each potato.
  • Just before serving, broil or use a salamander. Serve warm.
