Technical stages for Pipérade :
- Cut the peppers in strips and them in a pan with the onions and crushed garlic. Add the seeded, peeled and diced tomatoes. Add salt, pepper, and leave to cook. Beat the 8 eggs with salt and pepper and pour it in the pan. Bring to a boiling point to get scrambled eggs.
- On the side, quickly cok the ham in a pan and spread it on the piperade.
- Serve immediately.
