  • 8 sea urchins
  • shrimps
  • grey shrimps
  • 16 langoustines
  • 2 crabs
  • 400 g winkles
  • 1 kg snails
  • 1 kg clams
  • 800 g cockles
  • lemon
  • vinegar
  • shallot
  • mayonnaise
  • rye bread
  • butter
  • algae
  • crushed ice

Technical stages for Seafood Tray :

  • Garnish a large plate with algae you got from the fish shop.
  • Sprinkle with crushed ice and arrange the open oysters (6/guest). Arrange harmoniously the open urchins, shrimps and grey shrimps, langoustines and crabs cooked in broth, snails, clams and cockles.
  • Decorate with historiated lemon halves.
  • Serve with shallot vinegar, rye bread, butter and mayonnaise.
