Technical stages for Potatoes Anna :
- Cut the potatoes in cylinders, then in 3 mm-thick slices. Wash, pat dry and season.
- Put layers of potatoes overlapping each other in a well buttered skillet.
- Add up to the desired height. Add a bit of butter, start cooking and then bake uncovered. Press from time to time with a skimmer.
- Halfway through, tilt the pan to remove most of the butter. Flip the pancake, add a bit of fat and cook the other side.
