Technical Stages :
- Bake the potatoes with their skins.
- When baked, remove the skin and mash the meat.
- Keep mixing the meat, combining the seasoning and butter (200g /kg of potatoes).
- Combine also a bit of grated cheese. Heat up the oil and a bit of butter in a pan.
- When the mix is warm, pour the meat and spread it evenly to make a pancake. Cook over strong heat to cook and color the bottom of the pancake.
- Flip like any pancake or put it on a plate to then flip on the pan (easier). Cook the second side over strong heat. Put a bit of gratted cheese, cover with cream and in the oven or with a torch.
