  • broth or dehydrated broth
  • water
  • salt and pepper

Technical stages for Melting Potatoes :

  • Turn the potatoes in soap-like shapes.
  • Wash and blanch until boiling point is reached.
  • Drain and put in a buttered skillet. Roll in butter.
  • Moisten to the top with 3/4 broth and 1/4 water.
  • Season and cover with buttered baking paper.
  • Start cooking on the stove and finish in the oven. Baste the potatoes frequently during the whole process.
