Prepare all ingredients:
Peel and wash the potatoes.
Wrap them with a slice of smoked bacon. Hold the bacon in place using a wooden stick with a peeled shallot.
Tightly line the potatoes in a gratiné pan.
Pour the white wine in the bottom of the pan.
Dispatch the soya sauce in the white wine. Add salt and pepper.
Cover the pan with aluminium foil and bake 1 h 15 mn at 180°C.
When finished, remove the aluminium foil and place the diced cantal on the potatoes.
Bake once again...
...until it melts. Serve very hot.
