Technical stages for Waffled Potatoes :
- Peel and cut the potatoes in slices with a mandoline.
- Dip them in cold water and mix to remove as much starch as possible.
- Drain and pat dry.
- Dip in really warm frying oil and let them get a golden color, constantly turning with a skimmer, to prevent them from sticking to each other.
- Drain, salt and serve.
