Ingredients for Cucumber Soup :

  • 1 cucumber
  • 4 tomatoes
  • 2 small peppers (1 red, 1 green)
  • 1 garlic clove
  • 1 onion
  • 1 tablespoon lemon juice
  • 1 litre dry white wine
  • 1 litre white chicken stock
  • 4 slices bread
  • 4 tablespoons olive oil
  • salt
  • pepper

Technical stages for Cucumber Soup :

  • Peel the garlic and onion. Rub the bread with the garlic, then crush the clove,. Finely the onion.
  • Peel the tomatoes and cucumber. Dice them.
  • Wash the pepper, remove the seeds and cut in very thin strips.
  • Put the chicken stock in a large bowl with the wine and lemon juice. Add the tomatoes, cucumber, garlic, onion, salt, pepper and peppers.
  • Let sit in the fridge for at least three hours.
  • Before serving, heat up the oil in a pan. Cut the bread in small cubes and brown them. Serve these croutons with the cold soup.
