Chicken

Chicken Plantain
  • For : 4 servings
  • Time : 40 minutes
  • Difficulty : easy

For this recipe, you need :

  • 1 chicken
  • 6 ripe plantains
  • 3 onions
  • 2 carrots
  • 1 green bell pepper
  • 4 tomatoes
  • 1 bay leaf
  • shrimp powder
  • salt
  • pepper
  • 1 cube chicken stock
  • parsley
  • peanut oil
  • water

Technical Stages :

  • In a stockpan, heat a bit of oil.
  • Sweat onions and diced tomatoes.
  • Cook for a few minutes.
  • Add the chicken cut into 10 or 12 pieces.
  • Leave to simmer 5 minutes.
  • Meanwhile, cut the carrots and green bell pepper in medium pieces.
  • Add to the chicken: 1/4 litre water and chopped vegetables.
  • Mix and cook for about 10 minutes.
  • Add salt, pepper and the shrimp powder.
  • In a frying pan, heat a bit of oil.
  • Add the plaintains cut in large pieces.
  • Fry for a few minutes.
  • Add the plaintains that were previously drained to the chicken.
  • Mix.
  • Leave to cook covered another 10 minutes.
  • Add the cube of chicken stock.
  • Mix thoroughly.
