Ingredients for Lemon Chicken :

  • one chicken, weighing 1.2 kg
  • 3 lemons
  • 100 g white mushrooms
  • 24 baby onions
  • 12 green olives
  • 2 tablespoons olive oil
  • salt
  • pepper

Technical stages for Lemon Chicken :

  • Cut the chicken into pieces. Rub them with one of the lemons.
  • Peel the onions.
  • Brown the chicken in a bit of oil. Add salt and pepper.
  • Add the juice of half a lemon. Cover and cook for 45 minutes.
  • Stone the olives.
  • Clean the mushrooms and them.
  • Cut in 7 or 8 thin slices out of the last lemon. Add the olives, mushrooms, lemon slices and baby onions in the pot, along with the remaining lemon juice. Cook for another 30 minutes or so. Season if needed. Serve warm.
