Marengo Chicken

For this recipe, you need :

  • one large 1.2 kg chicken cut in pieces
  • 60 g butter
  • 3 tablespoons olive oil
  • 40 g flour
  • 20 cl white chicken stock
  • 20 cl dry white wine
  • 1 tablespoon brandy
  • 2 onion or 2 shallots
  • 1 garlic clove
  • 6 tomatoes
  • 12 white mushrooms
  • 1 tablespoon chopped parsley
  • salt
  • pepper

Technical Stages :

  • Peel the onion and garlic. ciseler the onions and crush the garlic.
  • Season the chicken with salt and pepper.
  • Heat up the butter and oil in a pot.
  • Brown the chicken until golden on all sides. Add the onions and garlic, stir well so that they turn golden, not brown.
  • Add flour and cook, stirring, until the flour is slightly golden. Add gradually the white chicken stock and white wine, then bring to a boil. Lower the heat and let simmer for 30 minutes.
  • Peel the tomatoes under hot water, seed and coarsely crush.
  • Clean the mushrooms, wash them quickly in cold water, pat dry and mince.
  • Add the tomatoes and mushrooms to the mix, season with salt and pepper, simmer over low heat for 20 minutes, until the chicken is tender. Stir from time to time to prevent the sauce from sticking to the pot.
  • 10 minutes before the end, add the brandy.
  • Serve very warm. Sprinkle with chopped parsley.
