Chicken

Chicken Yassa
  • For : 5 servings

For this recipe, you need :

  • 1 chicken
  • 5 large onions
  • 1,5 garlic cloves
  • 1 cup mustard
  • salt
  • pepper
  • nutmeg
  • 3 cubes chicken stock
  • Peanut oil

Technical Stages :

  • Cut the chicken into 10 pieces.
  • Place the chicken pieces, 1 chopped garlic clove, 1 crumbled cube of chicken stock, half cup mustard, salt, pepper and nutmeg in a bowl.
  • Mix thoroughly and leave to marinate 30 minutes.
  • Place the marinated pieces of chicken on a baking sheet and grill them for about 30 minutes in the broiler of the oven.
  • Mince the onions and chop the rest of garlic.
  • Sweat using peanut oil for a few minutes
  • Lower the heat so that the onions do not brown.
  • Add the grilled pieces of chicken.
  • Add the rest of the mustard and mix.
  • Add water gradually to cover chicken.
  • Leave to simmer about 15 minutes.
  • Add the other two cubes of chicken stock.
  • Leave to cook about 30 minutes on gentle simmer.
  • When finished, adjust seasoning.
  • Yassa can be served with plain rice, bananas or boiled igname.
