Courgette Puree

Ingredients for Courgette Puree :

  • 1 kg courgettes (zucchini)
  • 3 garlic cloves
  • 50 g butter
  • 4 tablespoons chopped parsley
  • salt
  • pepper

Technical stages for Courgette Puree :

  • Peel and dice the cougettes.
  • Cook them in salted boiling water with the peeled garlic, for 10 minutes.
  • Drain and mash.
  • Transfer the puree into a pot. If too liquid, dry it out on the stove, stirring to prevent it form sticking.
  • Gradually add butter and herbs, stirring.
