Technical stages for Lentils Puree :
- Put the lentils in a large pot, cover with a lot of cold water, bring to a boil and skim.
- Add salt, pepper, bouquet garni, peeled onions and carrot.
- Cover and cook slowly for about 1h30.
- Remove the bouquet garni and cloves.
- Mash the lentils or puree them with a blender.
- Transfer the puree to a pot, add the butter and warm it up lowly, stirring with a wooden spoon.
