Ingredients for Lentils Puree :

  • 500 g green lentils
  • 2 onions with a clove in it
  • 1 carrot
  • 1 bouquet garni
  • 50 g butter
  • salt
  • pepper

Technical stages for Lentils Puree :

  • Put the lentils in a large pot, cover with a lot of cold water, bring to a boil and skim.
  • Add salt, pepper, bouquet garni, peeled onions and carrot.
  • Cover and cook slowly for about 1h30.
  • Remove the bouquet garni and cloves.
  • Mash the lentils or puree them with a blender.
  • Transfer the puree to a pot, add the butter and warm it up lowly, stirring with a wooden spoon.
