Technical stages for Potato Puree :
- Dice the potatoes and boil them in salted water for 15 to 20 minutes after a boiling point is reached.
- Drain and mash them with a fork.
- Transfer to a pot and, over low heat, gradually add the butter, stirring.
- Warm up the milk and salt it. Pour it in gradually, stirring.
- As soon as the milk is completely absorbed, stop stirring or else the puree will turn elastic and lose its lightness.
- Season and serve immediately.

- In a low-fat diet, reduce the amount of butter by half.
- In a low cholesterol diet, replace the butter by 2 tablespoons olive oil.
