  • 2 kg leeks
  • 200 g crème fraïche
  • juice of a lemon
  • salt
  • pepper

Technical stages for Leek Puree :

  • Wash and peel the leeks. them in slices.
  • Cook in salted boiling water for about 20 minutes.
  • Drain and puree in a blender.
  • Transfer the puree into a pot and cook over low heat, constantly stirring, to dry it.
  • Add the lemon juice, salt, pepper and at last the cream, whisking to make it foamy.
