Technical stages for Leek Puree :
- Wash and peel the leeks. them in slices.
- Cook in salted boiling water for about 20 minutes.
- Drain and puree in a blender.
- Transfer the puree into a pot and cook over low heat, constantly stirring, to dry it.
- Add the lemon juice, salt, pepper and at last the cream, whisking to make it foamy.
