Courgette Quiche

Ingredients for Courgette Quiche :

  • 200 g short crust pastry
  • 30 g butter
  • 4 courgettes
  • 80 g breadcrumbs
  • 3 eggs
  • 10 cl liquid cream
  • 10 cl milk
  • 2 tablespoons parmesan
  • 2 tablespoons basil
  • 1 teaspoon tabasco
  • salt
  • pepper

Technical stages for Courgette Quiche :

  • Cut the courgettes in 5 cm long pieces and blanch them in salted boiling water for 5 minutes.
  • Cool immediately under running cold water.
  • Slice them and pat them dry using two layers of paper towels.
  • Mix the whole eggs along with cream and milk.
  • Add the breadcrimbs, parmesan, basil and a few drops of tabasco. Add salt and pepper.
  • Line the pastry in a tart mold.
  • Place the courgettes on the bottom of the pastry and pour the mixture.
  • Bake 35 minutes at 180°C.
  • When finished, leave to cool slightly and serve.
