Technical Stages :
- Make a shortcrust pastry.
- Leave to rest in the fridge for half an hour.
- Thinly dice the bacon.
- Blanch in boiling salted water for a few minutes and drain.
- Thinly chop the ham.
- In a bowl, beat the eggs along with milk and crème fraîche.
- Season with salt and pepper.
- Roll out the pastry and line in a buttered tart mold.
- Sprinkle the bottom of the tart with chopped ham and bacon dices.
- Pour the prepared mixture.
- Bake in hot oven at 180°C for 30 to 35 minutes.
