Goose stew with Turnips

Ingredients for Goose stew with Turnips :

  • one 2kg goose
  • 800 g turnips
  • 3 onions
  • 1 garlic clove
  • 50 g goose fat
  • 0.5 litre white chicken stock
  • 2 tablespoons flour
  • 1 bouquet garni
  • sel
  • pepper

Technical stages for Goose stew with Turnips :

  • Dress the goose and cut it in pieces.
  • Brown the pieces of meat in goose fat in a large pot.
  • When golden, add the peeled and diced turnips, the minced onions and the crushed garlic.
  • Sprinkle flour on top of it.
  • Moisten with the warm white chicken stock. Season.
  • Cover and simmer for 1h30 over medium heat.
  • When finished, serve in the pot or a warm service dish.
