Ingredients for Rice pudding :

  • 100 g short grain rice
  • 1/2 litre milk
  • 75 g sugar
  • 1 vanilla bean
  • 1 orange peel
  • 2 eggs
  • 1 pinch salt

Technical stages for Rice pudding :

  • Place a saucepan of salted water on heat.
  • Once boiling, add the rice that has been rinsed under cold water ahead of time. Leave to boil for 2 or 3 minutes and rinse under cold water.
  • Heat the milk with a split vanilla bean and an orange peel that has been removed with a peeler.
  • When the milk begins to boil, add the rice and thoroughtly mix.
  • Let boil once again.
  • Cook on low heat until the rice has absorbed all the milk. This should take between 30 to 40 minutes.
  • and add the other whole egg to the yolk.
  • Sprinkle sugar and the preparation.
  • When finished, remove the vanilla bean and the orange peel.
  • Add the eggs and sugar mixture and mix using a wooden spatula. Cook the rice on medium heat until the preparation thickens.
  • Keep stirring so that the eggs do not coagulate. Place in ramekins and store in the fridge.
