Prepare all the ingredients.
Place a saucepan of salted water on heat.
Once boiling, add the rice that has been rinsed under cold water ahead of time.
Leave to boil for 2 or 3 minutes...
...and rinse under cold water.
Heat the milk with a split vanilla bean and an orange peel that has been removed with a peeler.
When the milk begins to boil, add the rice and thoroughtly mix.
Let boil once again.
Cook on low heat until the rice has absorbed all the milk. This should take between 30 to 40 minutes.
separate one egg yolk and add the other whole egg to the yolk.
Sprinkle sugar...
...and cremer the preparation.
When finished, remove the vanilla bean and the orange peel.
Add the eggs and sugar mixture and mix using a wooden spatula. Cook the rice on medium heat until the preparation thickens.
Keep stirring so that the eggs do not coagulate. Place in ramekins and store in the fridge.
