Ingredients for Coconut Rocks :

  • 180 g sugar
  • 2 eggs
  • 250 g grated coconut

Technical stages for Coconut Rocks :

  • Whisk the eggs and sugar until thick and pale.
  • Combine with the coconut. Mix well.
  • Butter a baking sheet. Drop pyramidal clusters of coconut dough on the baking sheet.
  • Bake for 15 minutes at 160/180°C or 320/356°F.
  • When finished, remove gently from the baking sheet with a metal spatula and leave to cool.
