Coconut Rocks
  • For : 14 nice rocks
  • Time : 25 minutes
  • Difficulty : easy

For this recipe, you need :

  • 180 g sugar
  • 2 eggs
  • 250 g grated coconut

Technical Stages :

Prepare all the ingredients.

Put the eggs in a metal bowl. Add the sugar.

Add the grated coconut.

Start mixing with a wooden spatula...

...and go on with the fingertips...

...until you obtain a sandy dough.

Butter a baking sheet. Drop pyramidal clusters of coconut dough on the baking sheet.

Alternate them preferably.

Coconut rocks do not rise when baking, you may therefore squeeze them on the baking sheet.

Bake at 160/180°C (320/356°F)...

...and let it bake...

..for about 15 minutes.

When finished, remove gently from the baking sheet with a metal spatula...

...and leave to cool.
