Sausage Rougail

Technical Stages :
- Prick the sausages with a fork, 3 or 4 times on the whole length. Cook in salted simmering water for 15 minutes.
- Meanwhile, the onions and tomatoes.
- Crush the chili peppers, ginger and salt together.
- When the sausages are cooked, cut them in 3 or 4 pieces each.
- In a pot, the sausages over strong heat for 3 minutes. Add the onions, blend, add the crushed mix and mix again.
- Add the tomatoes, stir well, and cook over medium heat.
- Serve with creole rice.
- Note:
- There is barely any sauce in this dish, but it should not be too dry either.
