Spicy Sauces

  • For : 1 litre sauce
  • Time : 20 minutes
  • Difficulty : easy

For this recipe, you need :

  • 5 gousses d'ail
  • sel fin
  • safran en poudre
  • 4 jaunes d'oeufs
  • 1 litre d'huile d'olive
  • piment de cayenne
  • concentré de tomates
  • piment rouge ou harissa

Technical Stages :

  • Crush the garlic cloves with the salt and saffron.
  • You may also add red chili pepper or harissa paste (optional).
  • Add the egg yolks and whisk, slowly and continuously adding the oil.
  • Same technique as for mayonnaise.
  • Season if needed.
  • NOTES:
  • If the sauce is not colourful enough, you can add a bit of tomato paste or powdered saffron.
