Sablés with Green Tea, Melon and Chocolate Sorbet

For this recipe, you need :

  • 1 melon
  • 250 g flour
  • 100 g icing sugar
  • 125 g butter
  • 1 egg
  • 25 g almond powder
  • 2 teaspoons green tea
  • 1 pinch salt
  • 1 litre chocolat sorbet

Technical Stages :

  • Mix the butter with the eggs.
  • Add icing sugar, almond powder, flour, green tea and salt.
  • Soon you will have a homogeneous dough, leave to rest in the fridge for 2 hours.
  • Roll out the dough replacing flour with icing sugar.
  • Cut eight 15 cm long rectangles and place them on a slightly buttered sheet and bake them at 180°C for 10 to 15 minutes.
  • Leave to cool.
  • In the melon, scoop balls of flesh using a melon baller.
  • Dress individual plates with sablés, melon balls and one scoop of chocolate sorbet.
