Sablés with Green Tea, Melon and Chocolate Sorbet
Technical stages for Sablés with Green Tea, Melon and Chocolate Sorbet :
- Mix the butter with the eggs.
- Add icing sugar, almond powder, flour, green tea and salt.
- Soon you will have a homogeneous dough, leave to rest in the fridge for 2 hours.
- Roll out the dough replacing flour with icing sugar.
- Cut eight 15 cm long rectangles and place them on a slightly buttered sheet and bake them at 180°C for 10 to 15 minutes.
- Leave to cool.
- In the melon, scoop balls of flesh using a melon baller.
- Dress individual plates with sablés, melon balls and one scoop of chocolate sorbet.
