  • 1 tablespoon capers
  • 5 pickles
  • 1 small cucumber
  • 4 medium-sized potatoes
  • 1 beet
  • 5 anchovie fillets in oil
  • sunflower seed oil
  • vinegar
  • salt
  • pepper
  • parsley

Technical stages for Salade antiboise :

  • Prepare a vinaigrette with the oil, vinegar, salt and pepper.
  • Dice the cooked and cooled fish and transfer it to a salad bowl. Add the drained capers, sliced pickles, and the potatoes, cucumber, beet and anchovies cut into pieces.
  • Mix gently and serve cold, sprinkled with parsley.
