Ingredients for Auvergnate Salad :

  • 200 g mixed salad
  • 200 g dried sausage
  • 200 g fourme d'Ambert
  • 200 g button mushrooms
  • 12 walnuts
  • 1 small tray of cherry tomatoes
  • Juice of a lemon
  • Dressing:
  • 3 tablespoons sunflower oil
  • 2 tablespoons walnut oil
  • 2 tablespoons vinager
  • 3 tablespoons aromatic herbs (parsley, chives, mint)
  • salt
  • pepper

Technical stages for Auvergnate Salad :

  • Rinse the salad under running water, drain and spin.
  • Slice the sausage.
  • Cut out the stems of the mushrooms, drain them then thinly slice them. toss them in the lemon juice so that they will not darken.
  • Dice the fourme d'Ambert.
  • In a small salad bowl, prepare the dressing using the listed ingredients and flavour it using the chopped herbs.
  • Gather in a salad bowl the mixed salad, walnuts, cheese, cherry tomatoes and sliced sausages.
  • Sprinkle with the herb dressing.
  • Serve immediately.
