Technical stages for Auvergnate Salad :
- Rinse the salad under running water, drain and spin.
- Slice the sausage.
- Cut out the stems of the mushrooms, drain them then thinly slice them. toss them in the lemon juice so that they will not darken.
- Dice the fourme d'Ambert.
- In a small salad bowl, prepare the dressing using the listed ingredients and flavour it using the chopped herbs.
- Gather in a salad bowl the mixed salad, walnuts, cheese, cherry tomatoes and sliced sausages.
- Sprinkle with the herb dressing.
- Serve immediately.
