  • 1 kg cooked langoustines
  • 400 g scallops
  • 200 g cooked pink shrimp
  • 400 g tinned asparagus tips
  • 2 hearts of lettuce
  • 1 tablespoon olive oil
  • 1 lemon
  • 5 cl vinegar
  • chervil
  • salt
  • pepper
  • Sauce:
  • 150 g mayonnaise
  • 3 tablespoons ketchup
  • 1 tablespoon cognac
  • tabasco

Technical stages for Asparagus Salad with Shellfish :

  • Shell the langoustines.
  • Fry the scallops in olive oil.
  • Season and drizzle with the lemon juice.
  • Wash the hearts of lettuce and place the nicest leaves in individual cups.
