Potato Salad

Ingredients for Potato Salad :

  • 800 g potatos
  • 200 g celery sticks
  • 100 g mixed salad (mesclun)
  • 2 sprigs chive
  • 2 sprigs mint
  • 2 sprigs tarragon
  • 3 Tablespoons olive oil
  • 2 tablespoons Xeres Vinegar
  • 1 juice of 1/2 lemon
  • 2 slices cured ham
  • salt
  • pepper

Technical stages for Potato Salad :

  • Cook the potatoes à l'anglaise for about 15 minutes (they must come out tender but firm).
  • Cut the celery in julienne. You may use a mandolin.
  • Thinly slice the potatoes.
  • Thinly chop the herbs.
  • In a salad bowl, place on top of the salad, potatoes, celery and herbs. Mix delicately.
  • Prepare the sauce:Mix salt and vinegar together.
  • Whisk as you add the oil, then lemon and pepper. You can soften with a little bit of water. Mix together.
  • Sprinkle the salad with this sauce. You may also serve on the side in a sauce bowl.
  • Finally, thinly slice the cured ham and place on the salad.
