Tagliatelli Salad

Ingredients for Tagliatelli Salad :

  • 180 g salmon
  • 100 g button mushrooms
  • 1 1/2 lemon
  • basil
  • dill
  • 2 tomatoes
  • 1/2 garlic clove
  • black olives
  • 200 g fresh tagliatelli
  • 6 tablespoons olive oil
  • 1 crottin of fresh goat cheese
  • salt
  • pepper

Technical stages for Tagliatelli Salad :

  • Boil the fresh tagliatelli 3 to 4 minutes in salted boiling water.
  • Drain and put aside.
  • Slice the salmon in thin slices.
  • Place them on a dish.
  • Sprinkle with the juice of a lemon and olive oil.
  • Add the chopped dill and leave to marinate in the fridge.
  • Wash and thinly slice the button mushrooms.
  • Very thinly chop basil along with garlic and olives.
  • Add 3 tablespoons of olive oil and season with salt and pepper.
  • Monder the tomatoes, peel them, seed them and crush them.
  • Season with 1 tablespoon of olive oil, salt, pepper and add a bit of chopped basil.
  • Mix the cold tagliatelli with the basil and olive sauce.
  • Add the marinated salmon and the diced goat cheese.
  • Place the tomatoes on top and decorate with a few leaves of fresh basil.
