Boar and Beans
  • For : 4 servings

For this recipe, you need :

  • 600 g boar belly
  • 1/2 litre white wine
  • 2 cl vinegar
  • 1/2 litre broth
  • 300 g turnips
  • 1 dl meat glaze
  • 1 bouquet garni
  • salt
  • pepper

Technical Stages :

  • Cut the boar belly into large cubes.
  • Put the broth and wine in a large pot. Put on the stove. Add the meat, bouquet-garni, vinegar, salt and pepper.
  • Simmer over low heat for 2 hours, covered.
  • Peel and slice the turnips. Put them in the stew and keep cooking for another hour uncovered, so that the sauce reduces.
  • Add the meat glaze, bring to a boil for a few minutes. Season if needed.
  • Arrange the meat on a warm service dish and put the pieces of turnip around. Coat it all with warm sauce.
