Emulsions Sauces

Sweet and Sour Sauce

For this recipe, you need :

  • 100 g mayonnaise
  • 3 teaspoons tomato sauce
  • 1/2 teaspoon armagnac
  • 1 tablespoon chopped tarragon, chervil and parsley
  • 2 drops tabasco

Technical Stages :

  • Mix all the ingredients with the mayonnaise and herbs just before serving.
