Ingredients for Bologne Sauce :

  • 200 g ground beef
  • 30 g butter
  • 1/2 onion
  • 1 small carott
  • 40 g chopped ham
  • 1 pinch nutmeg
  • 1 tablespoon tomato sauce
  • 20 cl brown veal stock
  • salt, pepper

Technical stages for Bologne Sauce :

  • Slowly steam in butter the diced onion and carotts, without browning.
  • Add the beef and keep stirring. Add the ham, tomato sauce and nutmeg. Add the brown veal stock, salt, pepper, and cook for 1 hour.
