Ingredients for Charcutière Sauce :

  • 2 shallots
  • 30 g butter
  • 3/4 white wine
  • 1 tablespoon tomato paste
  • 4 pickles
  • 1 tablespoon chopped parsley
  • dijon mustard

Technical stages for Charcutière Sauce :

  • Make the shallots in butter without browning.
  • Add the tomato paste. Stir, then with wine and an equivalent amount of broth.
  • Simmer for 10 minutes
  • Away from the heat, add the pickles cut in julienne and 1 teaspoon mustard. Season. Serve the sauce warm, sprinkled with chopped parsley.
  • NOTE:
  • Served with white meats, mostly pork chops.
