Technical stages for Charcutière Sauce :
- Make the shallots in butter without browning.
- Add the tomato paste. Stir, then with wine and an equivalent amount of broth.
- Simmer for 10 minutes
- Away from the heat, add the pickles cut in and 1 teaspoon mustard. Season. Serve the sauce warm, sprinkled with chopped parsley.
- NOTE:
- Served with white meats, mostly pork chops.
