Tapenade

Ingredients for Tapenade :

  • 100 g pitted black olives
  • 100 g anchovy fillets
  • 100 g de capers
  • 10 cl olive oil
  • 1/2 tsp mustard

Technical stages for Tapenade :

  • In a mortal, crush the olives along with anchovies, mustard and capers until perfectly mixed and smooth. Add olive oil progressively and whisk the mixture like a mayonnaise.
  • INFOS:
  • Serve the tapenade as an entree with warm toast or on grilled bread slices or as a garnish specially with fish.
