Sauce Gribiche

For this recipe, you need :

  • 1 hard boiled egg
  • 1 dl oil
  • 2 spoons vinegar
  • salt, pepper
  • parsley, tarragon, chervil
  • 10 capers
  • 2 pickles

Technical Stages :

  • Crush the egg yolk, add the oil and whisk as if preparing a mayonnaise.
  • Add the vinegar, salt and pepper.
  • Finely chop the capers, pickles, herbs and egg white cut into strips. Mix with the mayonnaise.
  • USES:
  • Cold meat or fish, asparagus, salads.
