Wine-based Sauces

Marchand de Vin Sauce

For this recipe, you need :

  • 50 cl red wine
  • 3 onions
  • 1 tablespoon potato flour
  • 1 tablespoon armagnac or brandy
  • salt, pepper
  • 15 g butter

Technical Stages :

  • Cut the onions in thin slices. Steam in butter for 2 minutes, without browning.
  • Add the red wine and reduce by half for 15 minutes over medium heat.
  • Add salt and pepper. Filter through a chinois.
  • Dilute the potato flour in a bit of cold water, add the red wine, stirring. Cook for 10 minutes.
  • At last, add the Armagnac or brandy and keep warm.
