Mustard Sauce

For this recipe, you need :

  • 1 shallot
  • 1 tablespoon Dijon mustard
  • 10 cl white wine
  • 1 tablespoon meat juice
  • 10 cl crème fraîche
  • 1 knob of butter

Technical Stages :

  • Sweat the chopped shallot in butter.
  • Add a spoonful of mustard and stir with a wooden spatula. Deglaze with the white wine and meat juice, dissolving the mustard.
  • Reduce to 1/3 of its original volume, add the cream and reduce again by half.
  • Keep warm.
