Ingredients for Spicy Sauce :

  • 20 cl semi-glaze sauce
  • 40 cl wine vinegar
  • 1 onion
  • 2 shallots
  • 2 pickles
  • salt, pepper
  • 1 knob of butter

Technical stages for Spicy Sauce :

  • Slightly brown the chopped shallots and onion.
  • Add the vinegar and to a tablespoonful.
  • Add the semi-glaze sauce. Cook over low heat for 15 minutes.
  • Finish up by adding the sliced pickles, away from the heat.
