Emulsions Sauces

Green Peppercorn Sauce

  • Difficulty : easy

For this recipe, you need :

  • 15 cl white wine
  • 2 cl armagnac
  • 1 cl green peppercorn juice
  • 6 cl chicken stock
  • 20 cl thick crème fraîche
  • 2 cl Port wine
  • 20 g green peppercorns
  • salt

Technical Stages :

  • Reduce by 2/3 over strong heat the white wine and armagnac, for 5 minutes. Add the green peppercorn juice, chicken stock and boil for 5 minutes.
  • Add 20 cl cream, salt, then let reduce again for 15 minutes, simmering.
  • Add the port wine and green peppercorn.
  • Keep warm.
