Technical stages for Green Peppercorn Sauce :
- by 2/3 over strong heat the white wine and armagnac, for 5 minutes. Add the green peppercorn juice, and boil for 5 minutes.
- Add 20 cl cream, salt, then let reduce again for 15 minutes, simmering.
- Add the port wine and green peppercorn.
- Keep warm.
